Citation: At approximately 09:15 while performing anti mortem inspection in kill room observed ceiling over live bird hanging line adjacent to scalder tank dirty with several unidentifiable brown spots approximately 1/4 inch in diameter. No killing of Ducks starting at this time. Mr. [redacted] Plant Supervisor informed verbally and in writing of non-compliance and 9CFR416.1 and 416.2(b)(2). This document serves as written notification that failure to comply with regulatory requirements could result in additional regulatory or administrative action(s).
Regulation:
416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.
416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
