Citation: At approximately 0700 hours I observed the following while performing a scheduled 01B02 procedure task subsequent the establishment's verbal and noted acceptable pre-operational inspection and prior to the start of operations; meat particles and residue, and approximately fifteen fat and meat scraps varying from 1/8" to 1/2" in size on the direct product contact surfaces of the stainless steel conveyor belt in the Evisceration Room. Stainless steel conveyor rejected with US Rejected tag# B39029897. In addition, I observed black unknown residue and product residue along the backside non-product contact surface and at the support joint ends of the crossbar with hooks used to the hold the ducks during the final wash in the Final Wash Station situated on the West wall of the Evisceration Room. The establishments SSOP plan signed and dated 2/2/10, page 1 section A. Equipment Cleaning sub-part 3. Implementing, Monitoring and Recordkeeping states: "[redacted] ". I immediately notified [redacted] Production Supervisor verbally of the non-compliances. This is a failure to meet: 9CFR 416.13(c), 9CFR 416.4(a), 9CFR 416.4(b) and 9CFR 416.1.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
