Citation: At 0845 hours, while performing a zero tolerance check for feces, procedure code 03J01, I observed feces on 2 birds out of a 10 bird sample. The feces were located under the fatty flap area of two of the carcasses from the ten bird sample. The feces was approximately 1/4 Th of an inch in size, the feces was brown in color. CSI immediately notified the plant supervisor Mr. [redacted] verbally and in writing in of these non-compliances failure to meet regulatory requirements. 417.2(c) (4) I observed the establishment implement corrective actions by re-washing and sanitizing the affected bird. The 03J02 was initiated. The bird with feces in it send back to wash station for re-condition. An extra associate was added to the final wash station until two consecutive retests passed. Quality Assurance performed the two passing retests and I monitored both of them. And fecal contamination is a known vehicle for pathogen transmission. And fecal material is a physical and a biological hazard. This is a repetitive noncompliance (NR) and therefore linked to NR: 0007-2011-14687 dated 02/22/2011. Past Similar NRs Previous Ineffective Plant Actions: procedures to prevent reoccurrence ineffective, Continue failure to meet regulatory requirements could result in further enforcement actions as described in 9 CFR Part 500-4 Rules of Practice.

Regulation:

417.2(c)(4) List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits;
