Citation: At 1000 hours on this date while observing conditions in the product cooler/freezer I noted the following areas are not in compliance with 416.2(b)2 which states that " walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions".1) In the product cooler below the refrigeration unit on the entrance wall there is a build-up of ice on the part of the piping below the unit which is not covered with insulation. The ice build-up is approximately 1/2 foot in length on a straight piping section. Raw product stored under the unit was in covered boxes. 2) In the freezer area along the inside door frame and the frame above the door there is ceiling caulking which is loose in areas approximately 2 - 3 inches in length in 5 separate areas. Also visible is peeling paint on the above and side door frames especially along the top door frame when the door is slid open on the inside of the freezer. Supervisor [redacted] was notified verbally of these non-compliances at 1030 hours on this date. All product in the freezer was raw finished product in covered boxes.
