Citation: At 1400 hours on this date Inspection Personnel observed condensate located on the ceiling area above the rinse box for slaughtered poultry carcasses. Carcasses exiting the rinse box were being hung on a rack below the condensate. US Rejected tag # B38785530 was placed on the rack and 32 slaughtered duck carcasses were retained. Supervisor [redacted] was notified at 1415 of the condensate and retained poultry. The slaughter was stopped and the condensate on the ceiling was cleaned. The plant followed corrective actions and rinsed each retained duck carcass with chlorinated water of approximately [redacted] PPM. I observed the carcass wash and removed the retained tag allowing the carcasses to start the air chill process. 416.2(b)2 was not met which states that "walls, floors, and ceilings within establishments must be built of durable materials, impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions."
