Citation: At 0545 hours on this date while performing code 01B02 in the evisceration department Inspector noticed that the caulking material used to seal space between the concrete slope in the floor and the [redacted]paneled wall, adjacent to the evisceration conveyor is peeling in sections and black mold is apparent on the caulk in various sections. The caulking material used is to seal the strip in the section described above is approximately 1/2 inch wide. The area in question is not a direct food contact area. Raw product is processed in this area. Parts of 416.4(b) are not being met which states" that non food contact surfaces of facilities, equipment and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions...." Supervisor [redacted] was notified at 1100 hours on this date of this non compliance.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
