Citation: Between 0900 and 1000 hours on this date I was in the slaughter area to observe inedible containers for denaturing in the immediate area. There was no slaughter on this date and while in the area I noticed three items which need attention. 1) the screen for the screen door for the live receiving room is in need of repair for a horizontal rip in the screen near a previously repaired section. There were no flies noticed in the area. The wooden door was closed securely to prevent vermin and I had to open the door to view the screen. 2) the floor area around the scalding tank has cracks which had been previously repaired before my present tour of duty in this establishment. I have noticed that sections of the compound used to repair the cracks is peeling in sections and these areas need attention. 3) the insulation that is covering pipes on the north wall located above the cages where the live ducks in cages awaiting slaughter are usually stored is peeling and loose in sections and some areas are torn/shredded. 416.2(b)(2) states that" walls, floors and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned as necessary to prevent adulteration of product or the creation of sanitary conditions." Mr. [redacted] was notified of item #3 earlier this week and Mr. [redacted] was notified also on item #1. This NR will serve as written notification on 08/02/2010. There is no product affected. No retain tags were issued. Continued failure to meet these regulatory requirements could result in additional regulatory or administrative action. Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
