Citation: At approximately 0600 hours, while touring the evisceration department after the plant had completed their sanitation check and prior to the start of operations I verified the plants SSOP by performing a pre-operational inspection. During this inspection I was accompanied by Mr. [redacted] Sanitation Supervisor. While performing this inspection I observed a silicon seal about 4 inches long and one half inch wide in the wash station. It had been peeled due to daily pressure washing and there were pieces of silicon inside the wash station sink. The wash station is located between the inspection line and cooler No.1. This is considered a non product contact surface, but if not detected could cause product adulteration or the creation of insanitary conditions if allowed to come into contact with product, and could pose a public health issue if product entered commerce. I verified the facility corrective actions and immediately applied US. REJECT tag B38785545 to the wash station. Mr. [redacted] Sanitation Supervisor Shift Manager was notified of the failure to meet regulatory requirements. These deficiencies do not comply with the Meat and Poultry Inspection regulations. Mr. [redacted] Sanitation Supervisor immediately provided the following preventive measure and corrective action by removing all pealed silicon from the wash station, and the wash station was cleaned and sanitized. Plant manager Mr. [redacted] gave instructions to the sanitation crew to be more observant. After I verified the corrective actions, the reject tags were removed and operation resumed as normal. This NR is the written notification of the noncompliance. This document serves as a written notification that your failure to comply with the regulatory requirements could result in additional administrative actions.
