Citation: At 0600 I performed an Pre- Operational Review and Observation of the establishment and found the following noncompliance: Packing Room (a) Mold (black) growing on the window seal on the wall that separates the evisceration room for the packing room. The mold was dispersed in splotches across the window seal; (b) greasy build-up and fat particles on knives that were set-up in the room for use; (c) a black substance in the groves dispersed across the white shovel used to pull ice from the ice machines. Scalding Room (a) trough the catches and leads exposed (no feathers) chickens from the picking machine into the Evisceration room was sitting in the corner in direct contact with the floor. I showed these deficiencies to plant supervisor, [redacted] These deficiencies are in noncompliance with plant SSOP plan which states: “ [redacted].” This plan was last assessed on 01/20/2012. These deficiencies are also in noncompliance with 9 CFR 416.1, 416.13(c), 416.4(a). I have associated these deficiencies with US. Reject tag #B37056690.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
