Citation: On May 15,2012 at 12:00 p.m. after lunch period was over I returned back to the Inspection room and found this room still not cleaned thoroughly. Blood was still on parts of the viscerating table along with the floor not cleaned. Parts of carcasses was left on the floor as well pieces of the viscera was left on the table which the gizzards are processed. I tagged the room (#B38033442) and instructed plant management that this is not acceptable and this room must be properly and thoroughly cleaned as to prevent product adulteration. Due this reason plant in direct violation of 416.1 operate in a manner to prevent insanitary conditions as well as 416.12(a) ssop shall be conducted daily, before and during operations to prevent adulteration of product. No product was affected and room was cleaned properly before slaughter was allowed to commence. Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.
