Citation: On April 25,around 9:50 a.m. while performing a directed operational sanitary task during production I noticed a roach crawling on the table of the lunch room located at the basement of the establishment. I took a piece of paper and killed the roach and then called plant management to notify then of my findings. I continued to investigate and found any more evidence of more roaches or pests in the establishment. Even though it was during production hours they was no evidence that product was adulterated. This document serves as written notification that your failure to comply with regulatory requirements can result in additional regulatory or administrative action.
Regulation:
416.2(a) Grounds and pest control. The grounds about an establishment must be maintained to prevent conditions that could lead to insanitary conditions, adulteration of product, or interfere with inspection by FSIS program employees. Establishments must have in place a pest management program to prevent the harborage and breeding of pests on the grounds and within establishment facilities. Pest control substances used must be safe and effective under the conditions of use and not be applied or stored in a manner that will result in the adulteration of product or the creation of insanitary conditions.
