Citation: At approximately 0905 hrs, while performing a directed SPS task , in order to verify that establishment was meeting with the regulatory requirements of 9CFR 416. I observed on the cooler door in the eviscerating room, several bolts showing evidence of oxidation. In addition in the employee rest room grout on tiles showing evidence of mold .this is a violation of regulations( 416.1) 416.2(b)(2). Deficiencies observer neither were nonfood contact surfaces nor was any product affected. Mr. [redacted] the establishment’smanager was informed verbally and in writing with this NR that FSIS considers continued failure within your Food Safety System serious in nature. As a federally inspected establishment, FSIS expects you to comply with the Poultry Products Inspection Act, 9CFR Parts 416 and 417 and all other requirements concerning the preparation, sale, and transportation of poultry produts.failure to comply with regulatory requirements could lead to further enforcement action.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
