Citation: On Friday, December 23, 2011, at approximately 0625 hours, after the establishment performed their pre-operational sanitation inspection and before the start of operation, I conducted a pre-operational inspection and observed the following non-compliances. (1) There were cobwebs built up in the ceiling in the back room, in which one section/corner of the ceiling/structure with the built-up cobwebs was directly above the pathway where poultry carcasses kept in the stainless steel tanks were transported from processing floor to the large edible cooler or vice versa. A regulatory control action was initiated and an U.S. Rejected Tag (#B38033443) was applied to the affected area until corrective action could be performed. Evidence was shown to the floor supervisor, [redacted] No product was involved. (2) In the poultry slaughter room (kill floor), a plastic cover of the light in the ceiling was observed with green color material and moisture built up inside. Evidence was also shown to the floor supervisor, [redacted] No product was involved. [newline][newline]These non-compliances are in violation of 9CFR 416.4 (b). Continued failure to meet regulatory requirement would lead to further enforcement action.

Regulation:

416.13(b) Each official establishment shall conduct all other procedures in the Sanitation SOP’s at the frequencies specified.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
