Citation: On Wednesday, December 14, 2011, at approximately 0655 hours, the start time of operation in the eviscerating/processing room, I observed an employee who was ready to work, stood by the evisceration table wearing a very dirty baseball cap. There were old organic residues, fecal and blood stains all over his cap. Floor supervisor, [redacted] was immediately notified to correct the deficiency before starting the operation. No product was affected.

This is a non-compliance with Regulation 9 CFR 416.5(b), Employee hygiene. Continued failure to meet regulatory requirements would lead to further enforcement actions.

Regulation:

416.5(a) Cleanliness. All persons working in contact with product, food-contact surfaces, and product-packaging materials must adhere to hygienic practices while on duty to prevent adulteration of product and the creation of insanitary conditions.

416.5(b) Clothing. Aprons, frocks, and other outer clothing worn by persons who handle product must be of material that is disposable or readily cleaned. Clean garments must be worn at the start of each working day and garments must be changed during the day as often as necessary to prevent adulteration of product and the creation of insanitary conditions.
