Citation: On November 10, 2011, at approximately 0800 hour, I observed the following. The floor of the top platform of the stairs located in the backroom, leading to the slaughter area, was filthy with dirt and significant amount of poultry fecal material. The evidence was immediately shown to the floor supervisor, [redacted] This area is a main passage from conference room (downstairs) to the slaughter/processing area (upstairs), with heavy human traffic. A regulatory control action was initiated, and an U.S. Reject Tag (#B41005024) was applied to restrict the affected area until corrective action could be performed. No edible food products were involved. [newline][newline]This is a noncompliance with Regulation 9CFR 416.2(b)(2). Continued failure to meet regulatory requirements would lead to further enforcement actions.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
