Violation: 416.13(a), 416.13(c), 416.4(b)

Citation: On July 20, 2011 at 7:30 a.m. while performing pre-op procedures I found a couple of noncompliance. In the kill room on the wall to right of the entrance to this room where the knife holder is located I observed blood and feathers from previous day production. In addition, the cylinders where the birds are placed to bleed out are broken and cracked. In the condition they are in it has become more difficult to maintain these cylinders properly cleaned. In the inspection room on the wall in which has to water connection I found the two small water hoses to be dirty with in. Due to this reasons plant is in violation of directive 416.4(b) non-food contact surfaces and because plant did not find these non-compliances they are also in violation of 416.13(a) pre-op procuders and 416.13(c) plant monitors implementations of SSOP procedures.
