Citation: At approximately 06:10 hrs. After the establishment performed their pre operational sanitation inspection and before the start of operations. I ,accompanied by Sanitation manager Mr [redacted] performed a scheduled hand on pre operation sanitation inspection task code 01B02 in order to verify that the establishment was meeting with regulatory requirements of 9CFR 416. The following noncompliance's were observed. In the eviscerating rooms a green plastic basket used for keeping wing tags on the eviscerating table with several feathers, and grease residue from prior day's operation. This is a food contact surface. No product was in the room at the time of inspection .US reject tag NO.B 19 932792 applied. In the same room the handle of the cooler also with fat residue US reject tag NO.B 19 932791applied. This is a product base area. Mr. [redacted] was informed that the establishment was in violation of 9CFR -416.4(a) (b) in addition this NR will be linked to NR #11-2010 dated 12/20/2010, and NR# -2011 dated 02/25/2011. Mr. [redacted] was also informed both verbally and in writing with this NR that continued failure to comply with regulatory requirements of 9CFR 416. Would lead to further enforcement action.

Regulation:

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
