Citation: At approximately 06:20 hrs. After the establishment performed their preoperational sanitation inspection and before the start of operations . I performed a scheduled task code 01B02 in order to verify that the establishment was meeting with regulatory requirements of 9CFR 416. I observed the following noncompliance's. In the eviscerating room the gizzard machine with particles of ingesta on the rollers also fatty residue on the underside. In addition a stainless steel bowl greasy. US rejected tag #B37014115 applied to machine, and #B37014119 applied to bowl.Thiese were food contact surfaces no product was in the room at the time of inspection .This NR is linked to NR #11=2010 dated 12/20/2010 The deficiencies were showed to sanitation manager Mr. and informed verbally and in writing with this NR that the establishment was in violation of 9CFR 416.4 and continued failure to meet regulatory requirements would lead to further enforcement action.

Regulation:

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
