Citation: At approximately 06:20 hours, after the plant performed their preoperational sanitation inspection, and before the start of operations I performed an unscheduled SPS task, 06D01 along with Sanitation manager Mr. [redacted] in order to assure that the establishment was meeting the regulations requirements of 9CFR. In reviewing and inspecting the facility, I observed on the floor in the packing room between ice machine #1, and adjacent wall separating the eviscerating room, from packing room, several pieces of fat, trachea, and a chicken head, in addition the drain in room also with fat, and debrie.The handle on a hose in the same room with grease .Reject tag NO. B37 014118 applied to room the requirements of 9 CFR 416.4(b) were not met. This deficiency were none a food contact surface areas and no edible product was directly involved. This deficiency was shown to Sanitation Supervisor; Mr. [redacted] This was a violation of 9CFR 416.4 (b) sanitary operations. Both verbally and in writing with this NR that continued failure to meet regulatory requirements would lead to further enforcement action.

Regulation:

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
