Citation: At approximately 0600, [redacted] Slaughter/Evisceration Quality Control Team Member, notified me that Slaughter process was released for Pre-Operation review and observation. In the picker room, chicken feathers and chicken particles were found on the underside of the picker frame. [redacted] Night Q. C., was present and notified immediately of the noncompliance. US Retain/Reject tag B39416926 was affixed to the Picker. [redacted] Third Shift Sanitation Manager, was present and implemented cleaning and sanitizing procedures. In the Kill room, several blood and chicken particles were found throughout the room on walls, ceilings, fan blades, and floor. Two spots of mold growth, one approximately long and the other approximately 1 long, were identified on one wall of the Kill Room. Slaughter/Evisceration Team Member, [redacted] was present and immediately notified. US Reject/Retain tag B39416925 was affixed to the Kill Room. Ms. [redacted] assembled a team for the cleaning and sanitizing of the room. In the Small Chiller, chicken particle was found in the water and paint was found adhering to a fin blade. Upon further investigation, a pipe overhead, attached to the ceiling, above the Small Chiller was found to be leaking into the chiller. Paint from the ceiling over the Small Chiller appeared to be pealing and rusted under several areas of the ceiling around the leak. [redacted] was again present and immediately notified. US Retain/Reject tag B39416904 was affixed to the Small Chiller. [redacted] and [redacted] drained the Small Chiller, affixed a temporary plastic barrier between the leaking pipe, pealing paint and the Small Chiller, and then cleaned and sanitized the Small Chiller. All tags were removed when sanitary conditions were restored. No product was involved.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
