Citation: At approximately 0655, [redacted] Night Q.C. released the processing department for pre-op inspection. Among randomly selected areas for verification were the Wing Splitter, Cone Line, and the Small Chiller. Inspection of the Wing Splitter at 0704 revealed chicken fat, particles, and biofilm residue on the large blade, a food product contact surface. [redacted] was present and immediately notified. Regulatory control was taken and US Rejected/Retained tag B39416924 was affixed to the Wing Splitter. Inspection of the Cone Line revealed chicken fat and particles on the chicken breast belt polyethelyne guides and stainless steel trays, both food product contact surfaces. Regulatory control was taken and US Rejected/Retained tag B39416927 was affixed to the Cone Line. [redacted] was present and immediately notified. Inspection of the Small Chiller revealed six (6), 1/16 to 1/8 inch pieces of chicken fat and particles adhering to the fin blades of the chiller, a food contact surface. Regulatory control was taken and US Reject/Retain tag B39416923 was affixed to the small chiller. [redacted] was present and called [redacted] Complex Manager, to address the chicken fat found on the fin blades of the Small Chiller. [redacted] had the Small Chiller emptied, rinsed, and sanitized. [redacted] innitiated corrective actions to clean and sanitize the Wing Splitter and Cone Line. No product was present and/or affected.[newline]This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
