Citation: Today at approximately 0610 hours during my Pre-Op inspection time, I observed the light brown color dried liquid spray-stains covering area size approximately 5'x6' appearing on the wall surface near the moving shackles entrance at the dividing wall in between the scalding room and the evisceration room inside the evisceration room. QC manager Ms. [redacted] was notified and shown of the noncompliance. Ms. [redacted] said to me that the dried stains on wall will be cleaned by to night. I also observed black color smeared finger prints, hand prints, shoes resudue marks appearing on the maintenance room entrance door located inside the poultry scalding room. Ms. [redacted] explained and said to me that she had mentioned about keeping the maintenance room entrance door clean to the plant workers, but they ignored her warning. Ms [redacted] finally said that she will have it cleaned by tonight.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
