Citation: Today at approximately 0610 hours, after reviewing the plant's Pre-Op record of today which indicating all slaughter areas were checked and marked as acceptable, I then performed my Pre-Op verification procedure. I found paste like yellowish color residues appearing at the metal parts which were covered by the long black color fiber-strips located right below the black color scalding rubber fingers of the scalding machine inside the plucking/picking room. QC manager [redacted] was immediately notified and shown of the noncompliance. QC manager [redacted] immediately called workers to come to clean up the areas. Ms. [redacted] said to me that the long black fiber-strips will be removed by tonight for better cleaning purpose. Finally, the residues at the scalding machine parts were removed and sanitized before the start of operation.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
