Violation: 416.13(c), 416.4(b)

Citation: At approximately 1440 hrs while observing the establishment's operational sanitation, the following non-compliance was noted. A wad of chewed blue gum was found on the production room floor (in the evisceration area, just behind inspector stand #2 and in front of the door to the picker room). This gum was noted in sight of two sanitation department employees that took no action even after they noted the inspector looking at it. QC [redacted] was notified of the finding and informed that it would be resulting in an NR. These findings are in violation of but not limited to 9CFR 416.13(c and 416.4(b)

Regulation:

416.13(c) Cleaning compounds, sanitizing agents, processing aids, and other chemicals used by an establishment must be safe and effective under the conditions of use. Such chemicals must be used, handled, and stored in a manner that will not adulterate product or create insanitary conditions. Documentation substantiating the safety of a chemicalís use in a food processing environment must be available to FSIS inspection program employees for review.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
