Violation:  416.13(c), 416.4(a), 416.4(d)

Citation: At approximately 0755 hrs, while observing the establishments operational sanitation the following non-compliances were observed. 1) Numerous pieces of rust flakes were observed on the conveyer belt at the end of the chiller. This conveyer is a direct product contact surface used to catch product exiting chiller. QC and sanitation manager were immediately notified of the findings. Table was immediately cleaned and sanitized. 2) 1 gray vat with whole chickens being held uncovered at the chiller area was found with black specks on the chickens and ice. QC was immediately notified of the findings. No retained or rejected tag was used as QC was verbally informed of the findings and immediately addressed the issue. SSOP plan pg 6 states that "[redacted]. These non-compliances are in violation of but not limited to 9CFR 416.13(c), 416.4(a) and 416.4(d).

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
