Violation:  416.1, 416.4(b), 416.4(d)

Citation: At approximately 0745 hrs, while performing pre-operational inspection the following non-compliance was observed. In the cooler a white powdery substance was found on the Metal door frame, wall and drain pipe underneath the cooling unit on the right of the cooler entrance. Small black particles and white powdery substance were observed on 1 case of bones, 1 case of sausage and on the lids of 5 brown combo bins containing chicken breasts all located directly underneath the cooling unit. Product was retained and area was rejected tag #'s B39416961 and B39416962 were applied. QC was present at the time of the findings. These insanitary conditions are in violation of but not limited to 9CFR 416.1, 416.4(b) and 416.4(d). This document serves as written notification that your failure to comply with regulatory requirements could result in additional regulatory or administrative action.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
