Violation:  416.1, 416.2(b)(3), 416.3(a)

Citation: At approximately 0630 hrs, while inspecting the cooler the following non-compliances were observed. 1) Numerous winged bugs were observed on 2 vats full of product. The vats were covered with plastic. Product was not affected. QC was present at the time of the findings. QC staff carefully removed the plastic coverings and replaced with new one's. After re-inspecting the cooler another 3 vats full of product were found with winged bugs on the plastic coverings 1 vat had at least a dozen dead bugs on the cover. Supervisor was immediately informed of the findings. A similar NR was written on 6/01/11. 2) In the cooler 1 metal squared bin half full of product and covered with plastic was found with rust and pitted welds on 3 of the corners as well as a crack about an inch long with residue embedded in it on the forth corner. Product was removed, container was rejected and tag # B39416985 was applied. Container was removed from production floor. Supervisor was notified of the findings. These insanitary conditions are in violation of but not limited to 9CFR 416.1, 416.2(b)(3) and 416.3(a). Past Similar NRs - Previous Ineffective Plant Actions: Office window was found open and immediately shut. NR: 20-2011 dated 6/1/2011

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

 416.2(b)(3) Walls, floors, ceilings, doors, windows, and other outside openings must be constructed and maintained to prevent the entrance of vermin, such as flies, rats, and mice.

416.3(a) Equipment and utensils used for processing or otherwise handling edible product or ingredients must be of such material and construction to facilitate thorough cleaning and to ensure that their use will not cause the adulteration of product during processing, handling, or storage. Equipment and utensils must be maintained in sanitary condition so as not to adulterate product.
