Violation:  416.13(c), 416.4(a), 416.4(b), 416.4(d)

Citation: At approximately 1645 hrs in processing room while observing the establishments operational sanitation the following non-compliances were observed. 1- Numerous black specks on the white conveyer table which catches chickens exiting the chiller and located directly underneath the cut-up line. 2- Greasy paper towels and black grease were observed on floor next to breast skinner. 3- Several small pieces of rusty metal chips were found on the floor in front of the entrance of the icing room as well as 2 pieces of greasy 2 inch metal tubes, screws and the garbage bin was overflowing onto the floor in the cryo room. Processing manager and the QC staff were informed of the insanitary conditions. The entire processing room was rejected and production stopped. Floor and tables were cleaned before operations started up again. SSOP plan signed and dated 7/28/10 page 6 states "[redacted]. These insanitary conditions are in violation of 9CFR 416.13(c), 416.4(a), 416.4(b) and 416.4(d). This document serves as written notification that your failure to comply with regulatory requirements could result in additional regulatory or administrative action.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
