Violation:  416.2(b)(1)

Citation: Tonight at approximately 2045 hour, I observed the brown color dried water stain spot about 2"x 3" in size appearing on an overhead pipe located at the last dead end section of the poultry processing area. I immediately reviewed the plant's SSOP-02-2 Processing Room Operational Checklist and the corrective action record for this week including the plant's inspection results of the day shift and the night shift. I found no indication of what I have just observed as I described above. And I found no open NR documenting what I have just observed and described above. I notified and shown the noncompliance to the night shift QC Technician . The night shift QC Technician said that she will notified the plant's repair department to fix that overhead pipe. And stated that no exposed raw poultry product will be put under that pipe until it is fixed. Failure to meet the federal regulatory requirement of the 9 CFR 416.2(b)(1) which stated that establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair. This document serves as written notification that failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action.

416.2(b)(1) Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.
