Violation:  416.13(c), 416.4(a)

Citation: 0820 hrs. While observing the establishments operational sanitation in the processing room the following non-compliance was observed. The vacuum packing machine by the cry-o vac station was observed with black grease on the 2 white plastic strips that come in contact with the inside of the immediate container (plastic bag) before sealing. The vacuum packaging machine by the special orders station had black grease on the 2 white plastic strips. The strips were chewed up and pieces of plastic were seen hanging off of them. Vacuum packing machine by pack out had small pieces of dried up chicken and white plastic strips were chewed up. All 3 vacuum sealers were rejected and tag #'s B19929026, B19929028 and B30649367 were applied. Processing manager and were notified of the findings. The white plastic strips were removed and cleaned After re-inspection vacuum sealing machines were released at 1000 hrs. These insanitary conditions are in violation of 9CFR 416.13(c) and 416.4(a). This document serves as written notification that your failure to comply with regulatory requirements could result in additional regulatory or administrative action.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
