Violation:  416.13(c), 416.4(a)

Citation: 0650 hrs. Processing room. While performing pre-operational inspection after plant records indicated all was inspected and passed the following non-compliance was observed. 3 cutting boards on a table in the back of the room by the bone saw were found with black specks and black residue embedded in the pits and crevasses of the boards. 1 cutting board by the poly bag station was also found with pits and crevasses which had black residue embedded in them. While running my fingers along the edge of the board a small chuck of the board came loose. Qc members and were informed of the findings. The boards were rejected and tag # B30649380 was applied. These unsanitary conditions found on food contact surfaces are in violation of 9CFR 416.13(c) and 416.4(a). This document serves as written notification that your failure to comply with regulatory requirements could lead to additional regulatory or administrative action.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
