Citation: At 1115 while performing an unscheduled 06D02 procedure, the following non-compliance was observed. There was seen to be peeling paint/silicone on the heating unit located behind the cutting and packaging tables in the raw processing room. An inspection of the other heating units indicated the need for the establishment to address paint and/or silicone issues on those (one on the other side of the cutting/packaging table and one in the RTE slicing room) as well. Mr. was immediately notified of this non-compliance. This is a non-compliance of 9 CFR 416.2(b)(1). No reject tag was applied because the location of these units and the current condition of them posed no immediate food safety hazard. They are, however, creating an insanitary condition that left unattended may result in product contamination. A review of the previous three months of non-compliances revealed no similar NRs.

Regulation:

416.2(b)(1) Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.
