Citation: On July 13, 2010 at approxitemaly 0745 I performed the above procedure and found the following noncompliance's on the small animals slaughter floor: the wall directly behind the final wash area had maggots crawling up the wall and on the floor. The wall behind the blood pit had maggots as well as the wall behind where the final trim takes place. The hose that is used for washing the carcasses had a grimy substance accumulated on the hose, along with fat, blood, and hair in and around the nozzle of the hose. The entire small animal slaughter floor was Rejected with tag #B18815292 and the hose was rejected with tag #B18815283. Slaughter was able to start at 0930 after the establishment re-cleaned and sanitized the entire floor. , Plant Manager has been informed of these noncompliances in both writing and orally. This document serves as a written notification that failure to comply with regulations could result in further regulatory and or administrative actions.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
