Citation: At approximately 0730 hours while conducting Sanitation Performance Standards (SPS) verification activities the following noncompliance was observed .When entering the offal cooler I noted the weather stripping around cooler door cracked and breaking away from frame and door with several pieces of stripping missing I also further checked the carcass meat cooler and freezer door and found the same conditions of weather stripping breaking away from around the frames of cooler doors being maintained I notified of the structural noncompliance and the need of maintaining these areas in good repair and sound construction as not to create the possibility of insanitary conditions due to condensation. I was informed that corrective will begin taking place to repair all weather stripping around all cooler doors in the establishment. A review of noncompliance records documented the previous 3 months did not reveal any with the same root cause.

Regulation:

416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.
