Citation: At approximately 1200 hrs I observed the following non-compliance. [newline][newline]A bovine that was over the age of 30 months was not properly marked and the records indicated that it was less than 30 months. After discussing the issue with the slaughter floor employees I found the head that was over 30 months old and the tooth that indicated that it was over was removed. The slaughter floor employee that removed the head also confirmed that the animal was over 30 months old. The slaughter floor employees then proceeded to properly mark the animal over 30 months old and then they changed the records to reflect the animal’s true age. No regulatory control action was taken due to the fact that this was taken care of promptly and before the animal was pushed into the cooler.

310.22(g)(4) Maintains records that verify that the official establishment that received the carcasses or parts removed the portions of the vertebral column designated as specified risk materials in paragraph (a)(1) of this section and disposed of them in accordance with §314.1 or §314.3 of this subchapter.
