Citation: At approximately 0715 hrs while performing pre-operational inspection I observed the following non-compliance. In the center of the processing room on the tables with nylon cutting board tops I found several pieces of meat/fat particles on the bottom of the nylon cutting boards as well as on the tops rails holding the table top up (non-contact). I also found small meat/fat particles in approximately 4 grey totes (contact) used to hold product during production. U.S. Reject tag NO. B39879075 was applied to the tables and the grey totes adjacent to the table. After informing of the non-compliance he proceeded to have the table and totes re-cleaned. After re-inspection of the totes and table, the U.S. Reject tag was removed and the tubs and table were released for use. This document serves as notice of non-compliance within Federal Regulation 9 CFR 416.4(a) and 416.4(b). Past Similar NRs - Previous Ineffective Plant Actions: Ineffective cleaning and ineffective plant pre-operational inspection to ensure sanitary conditions. NR: 24-2010 dated 11/16/2010

Regulation:

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
