Citation: While performing the 03J02 procedure and reviewing all the records associated with the Critical Control Points involved with the Slaughter HACCP Plan I found the following non-compliance. Shirks Meats Est. 18894 has a prerequisite program to [redacted]. [redacted]. On Friday 4/22/11 this was not performed despite the fact that they had slaughtered beef on 4/21/11. The records reviewed over the past month show that the internal carcass temperatures taken within 24 hours of entering the cooler have been well below the critical limit of [redacted]. The cooler temperature was taken twice on 4/22/11 at 7:20am and 7pm with temperature recordings of [redacted] and [redacted] degrees Fahrenheit respectively.

Regulation:

416.16(a) Each official establishment shall maintain daily records sufficient to document the implementation and monitoring of the Sanitation SOP’s and any corrective actions taken. The establishment employee(s) specified in the Sanitation SOP’s as being responsible for the implementation and monitoring of the procedure(s) specified in the Sanitation SOP’s shall authenticate these records with his or her initials and the date.

417.5(a)(1) The written hazard analysis prescribed in § 417.2(a) of this part, including all supporting documentation;
