Citation: On this date at approximately 1330 hours I was reviewing all the records associated with Not Fully Cooked, Not Shelf Stable, Heat Treated HACCP Plan. For Cooling Step CCP 4B under "monitoring" it states, "[redacted]." While reviewing the HACCP record, Time/Temperature Monitoring Log, I found that the monitoring frequency was not being followed per the written procedure for no temperature was recorded at the 1 hour mark for Bacons smoked and then cooled on 12/28/10, 1/04/11, 1/12/11. All the bacon did meet the CCP (4B) of [redacted]. [redacted] was informed of the non-compliance with 9 CFR 417.2 (c)(4). 417.2(c)(4) List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits.
