Citation: On this date at approximately 1045 hours I was reviewing all the records associated with Fully Cooked Not Shelf Stable HACCP Plans, one plan that covers Hickory Smoked Ham and other plan that covers Smoked sausages, hot dogs, bolognas and pork rolls. For Cooling Step CCP 4B under "monitoring" for both it states, "[redacted]." While reviewing the HACCP record, Time/Temperature Monitoring Log, I found that the monitoring frequency was not being followed per the written procedure for no temperature was recorded at the 1 hour mark for Hams smoked and then cooled on 12/23/10, 12/28/10, 1/04/11, 1/19/11 and Bologna cooked and cooled on 12/23/10, 12/29/10, 1/4/11 and also Hot dogs cooked and cooled on 12/23/10. All the products did meet the CCP (4B) of [redacted]. [redacted] was informed of the non-compliance with CFR 9 417.2 (c)(4). 417.2(c)(4) List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits.
