Citation: On this date while doing a survey of the plant with FLS Mr. [redacted] we found numerous items in need of repair. 1] The spice room had a small hole in the floor under the bottom shelf where the metal casing with wire in it came through the floor. 2] In the injector room there were holes no sealed in the upper part of the wall where the water pipes went through the wall. In the same area the door to this room from the processing room had exposed insulation. 3]On the north side and behind the smokehouse there was debris on the floor. 4] In the vacuum packing room there was coving missing at the base of the wall. The storage area in this room at debris on the floor. 5] The downstairs bathroom has missing coving. 6] The door leading to the slaughter area has exposed insulation and the top hinge is coming loose. 7]The door leading from the downstairs storage area to the outside has a gap at the bottom which could be a rodent entrance. 8] In the upstairs storage area next to the inspectors bathroom there were some old rodent droppings on the floor. There were rolls of labels on the shelf that could be contaminated from the rodents in this area so a reject tag was issued for the labels. [no.B18835556]. I informed Mr. [redacted] and showed him these items and later gave him this noncompliance report. This noncompliance report shall serve as written notice of the establishments failure to comply with all the regulatory requirements of 9CFR 416.2[b][1], 416.2[b][2].

Regulation:

416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.2(b)(3) Walls, floors, ceilings, doors, windows, and other outside openings must be constructed and maintained to prevent the entrance of vermin, such as flies, rats, and mice.
